I had a big cooking demo for a corporate client this week.  Around 400 people to get food samples to through the day.  Wow!  So, going into this, I knew I needed to have something that was simple, healthy and easy to serve.  The site had specifically asked for healthy dessert ideas.  Well, this is what I made.  Instead of fruit with lots of sugar or fat, it’s fruit with protein!  No way.  Protein, fat and fiber for dessert?  Yes!

  • 1/2 cup part-skin ricotta cheese
  • 1/2 cup non-fat or low-fat vanilla Greek yogurt
  • 1 tablespoon of sugar (or honey . . . whatever makes you happier)
  • 1/2 teaspoon grated orange zest (or the zest of some other citrus fruit)
  • 1/2 teaspoon vanilla extract
  • 1 cup fruit (I used strawberries this go round)

Combine the cheese through the vanilla extract in a bowl and beat until smooth with a hand mixer.  Cover and chill for 3 hours for the best flavor.  Spoon 1/2 of the fruit into each of 2 small bowls and top each with a couple tablespoons for cheese mixture.  You can obviously make more bowls for more people if you start off with more fruit because you will have leftover cheese mixture.  Otherwise, you can store the leftover cheese mixture in an airtight container in the fridge for about a week.  ENJOY!
